One-Pot Budget Dinners

One-Pot Budget Dinners

I have a rule for weeknights: if dinner makes more than one dirty pot, it had better be worth it. Most nights it is not. So I cook in one vessel, a deep skillet or a Dutch oven, and the sink stays almost empty.

One-pot cooking is also cheaper, not just easier. Pasta and rice cook in the sauce, so you do not need extra broth. The starch thickens the dish. You use one burner for less time.

What is inside

A 44 page printable PDF with 40 dinners. Every recipe lists the serving count, prep and cook time, total cost, cost per serving, a price on every ingredient line (estimated at 2025 US grocery prices), a numbered method and one tip. The costs range from $0.50 to $1.46 a serving, with a typical dinner near 91 cents.

The back page tells you which pot is best for which dinner: a 12 inch deep skillet with a lid for pasta skillets and rice, a Dutch oven for soup and chili, an oven-safe pan for frittatas.

Three dinners from the book

  • One-Pot Chili Mac: $1.42 a serving, and it feeds six. Ground beef, macaroni, beans and tomatoes in one Dutch oven. The tip: use half the beef and double the beans.
  • One-Pot Creamy Tomato Pasta: $0.89 a serving. Uncooked penne, crushed tomatoes, garlic and a splash of milk go in the pot together.
  • One-Pot Lentil Soup with Sausage: $0.89 a serving. A half pound of smoked sausage gives six bowls their flavor, while lentils carry the protein.

Three rules that make it work

Use a pot wide enough that pasta and rice sit in a layer. Stir pasta dishes often so nothing sticks. Keep the lid on rice dishes while they steam. If a dish looks dry near the end, add water a quarter cup at a time.

Who it is for

Anyone who cooks most nights and hates the dishes. Students, small families, new cooks, people who work late. The recipes are plain, and most use ingredients from a regular budget grocery store.

Prices in the book are estimates at 2025 US grocery prices; your store will differ, which is why the price appears on every ingredient line so you can swap in your own.

A note on stretching it further

Many of the recipes can be stretched. Add a can of beans to the chili mac, a cup of frozen vegetables to the creamy pasta, or serve the soups with a slice of toast. Each tip on the recipe page names one swap that lowers the cost per serving, and most of them take thirty seconds. If you cook two of these a week, the savings against takeout add up quickly, and you can see your own number because every line is priced.
